I was craving both oranges and carrots at the same time and thought, “Why not?!” So I made a bright little salad. Avocado would be an excellent addition, as would cilantro.
1 orange, peeled, halved, and sliced
1 carrot, peeled into ribbons with a potato peeler
1 handful sprouts or micro greens or baby arugula
1 handful walnuts
a drizzle of Everyday Dressing (also found here)
Blend the following in a Vitamix or other blender until smooth-
2/3 cup apple cider
1/2 teaspoon salt
1/2 cup xylitol or 1/4 cup raw honey
2 teaspoons dry mustard (2 Tablespoons yellow or brown mustard)
1/4 cup onion (red will make dressing a blush pink)
1 clove garlic
optional addition: zest of 1 orange
With motor running, slowly pour in 2-3 cups olive oil or avocado oil. Keeps well in refrigerator for up to 2 weeks.
