Citrus Salad with Cilantro & Pomegranate

My mom happened to be over when I threw this salad together the other day, and since then she has been eager to recreate it, so I am logging the recipe for her. It is wonderfully refreshing. I served it with our Everyday Dressing and leftover roasted chicken on the side.

Citrus Salad with Cilantro & Pomegranate

Makes 1 entrée salad

1 handful red leaf lettuce
1/4 cup red cabbage, halved, cored, and very thinly sliced
1/4 cup cilantro leaves, coarsely chopped
1/8 cup parsley leaves, coarsely chopped
1 carrot, shaved into into long thin strips with a potato peeler
1/8 cup red onion, peeled, halved, and very thinly sliced
sprinkling of radish sprouts
1 orange, zested (add zest to Everyday Dressing),peeled and sliced
1/2 grapefruit, peeled and sliced
handful of pomegranate seeds
3-4 slices avocado
optional: small handful toasted (or soaked & dehydrated) walnuts, coarsely chopped

Everyday Dressing:

Blend the following in a Vitamix or other blender until smooth-

2/3 cup apple cider
1/2 teaspoon salt
1/2 cup xylitol or 1/4 cup raw honey
2 teaspoons dry mustard (2 Tablespoons yellow or brown mustard)
1/4 cup onion (red will make dressing a blush pink)
1 clove garlic
Addition for this salad: orange zest

With motor running, slowly pour in 2-3 cups olive oil or avocado oil.  Keeps well in refrigerator for up to 2 weeks.

  1. Oh this looks like just the thing! I have all the ingredients on hand…except pomegranates. And making this without those rubies would be like a chocolate cake except the chocolate. So I will put this on my grocery list and salivate until then!
