Baked Steel Cut Honey Apple Oatmeal
*You will need to soak your oats overnight for this recipe.
1.5 cups dry steel cut oats (I used Bob’s Red Mill gluten free)
2 eggs
3/4 cup canned full fat coconut milk
3/4 teaspoon salt
3/4 teaspoon baking powder
1/4 cup raw honey
1 teaspoon cinnamon
2 teaspoons vanilla
1 apple, peeled and diced small
Place your oats in a medium baking dish, add 1 Tbl apple cider vinegar, cover with water, and place on the counter overnight.
Next morning, drain and rinse the oats. Preheat the oven to 350 degrees.
In a small bowl, whisk together the eggs, coconut milk, salt, baking powder, honey, cinnamon, and vanilla. Stir the egg mixture and the diced apple gently into the oats.
Bake uncovered for 1 hour. Serve hot with toasted nuts, coconut milk or almond milk, pastured butter, extra cinnamon, and currants or dried cherries.
