Garlicky Butter Beans with Avocado and Smoked Paprika
1/2-1 cup cooked butter beans
1 clove fresh garlic, minced
1/2 an avocado, sliced
smoked paprika
himalayan (pink) salt
organic olive oil
toasted sesame seeds or hemp hearts
fresh flat leaf parsley
In a cast iron or stainless steel pan, saute the butter beans in 1 tablespoon of olive oil on medium heat (not too hot!). Add the fresh garlic, a sprinkle of salt, and a dash of smoked paprika, and stir to combine. When it’s heated through (and you’ve started to drool), plate and garnish with the avocado, a drizzle of olive oil, another pinch of salt and paprika, a sprinkling of sesame seeds, and a few leaves of parsley. Sit down somewhere, enjoy the flavors, and eat slow.
